Jicama (pronounced HICK-ah-mah or HEE-kah-mah) has an edible root which has a texture and taste similar to a water chestnut. It's delicious both raw and cooked. Eat jicama with veggie dip, add it to stir fry, or substitute it for potatoes. The possibilities are endless with this versatile vegetable. Jicama is also known as yam bean and Mexican turnip. Jicama is a vining plant. It grows white flowers and green pods. The pods are not edible and are poisonous, so stick with just the root at the dinner table.
